Today I’m giving away a signed copy of Michael Natkin’s cookbook Herbivoracious. I met Michael at Eat, Write, Retreat, where he spoke about the detailed preparation and endless recipe testing that goes into publishing a cookbook. I was lucky enough to snag an extra copy of his beautiful book for one of my hungry readers.

I’m in no means a vegetarian, but when I cook at home I most typically make meatless meals… aka Nikki’s house of pasta. This book has gorgeous photos and fantastic recipes that anyone (meat lover or not) will fall in love with. I was immediately intrigued by the fluffy basil gnudi on the cover…seriously, how amazing does that dish look?

So I tried my hand at the gnudi (think gnocchi but with ricotta cheese instead of potato) – and it’s definitely not as beautiful as Michael’s version, but I promise it tasted wonderful! It was a perfect summer Sunday night meal shared with my older brother. Oh, and it was especially good with a crusty baguette to soak up the buttery wine sauce!

    My favorite summer meals are grilled balsamic veggies, and a couscous salad that I make with chickpeas, tofu, tomato, basil, olives, and feta. Yum. Would love to win the cookbook!

    My favorite recipe is a black bean burger recipe that includes a ‘secret sauce’ ala McDonald’s Big Mac. Being a vegetarian can sometimes mean BBQs aren’t that fun, but if I make a plate of these to grill up not only do I have a burger to chow on, but I get other folks thinking about other ways to enjoy a ‘burger’.

    Too many amazing veggie dishes to pick from! Recently, I’ve been obsessed with smashed avocado on whole grain baguette drizzled with balsamic. And homemade pasta with fresh pesto–always a winner in my book!

    I love your blog, especially since I used to live in DC! In the summer I enjoy eating anything caprese: salads, bruchetta, etc. Especially with fresh basil and tomatoes from my garden. What I also really enjoy is adding strawberries and nuts to my salads. They really help with color and texture along with flavor. :)

    In the summer, I’m all about sliced tomatoes with a little salt — and if I can layer them with thick slices of mozzarella and fresh basil, all the better! No summer snack feels complete without it.

    Nikki, I have to admit–I’m a bit obsessed with your blog. It’s been ages since I last saw you in Paris, but I like keeping up with your adventures via this site! I eat meat-free all year, but my favorite summer veggie dishes have to be grilled corn with queso fresco and chili powder, caprese with fresh basil, and some good old fashioned no-bake icebox cake!

    Nikki! FIrst comment ever — It feels good. Ok lately I’ve been craving grilled peaches with ginger balsamic reduction. Not dessert. If it goes on the grill you get to eat it for dinner.

    Wheat berry salad! wheat berries, vegan yogurt (you can experiment with flavors), cubed apples and celery for that crunch, and any berries + nuts lying around the kitchen! Yum

    i love reading your blog…my favorite veggie recipe is a black bean quesadilla. i put black beans, hot sauce, red pepper flakes, and garlic in a food processor to form a paste. then i spread it in a low carb tortilla (la tortilla factory is awesome!) and add grilled onions and peppers, tomotoes, white cheddar, and a 100 spicy wholly guacamole pack…yummm
