Cookies and Cream Pound Cake

all i wanted was a simple night of baking. to distract myself, do something easy and make something sweet. Easier said than done I guess…

First, there was the no flour dilemma. It’s ok. I made mouse ears. I also found a cookies and cream pound cake mix from Williams Sonoma in my pantry that I have been meaning to try. Great. This will be easy and will look nice in my new bundnt pan. Wrong. Half of the cake got stuck in the pan so it was far from pretty. Oh fail.

So after two set backs, I was not going to fail. I woke up extra early in the morning to make a chocolate ganache glaze to drizzle over the cake and hopefully cover up the mistake. Even though I made a chocolatey mess in my kitchen, adding the ganache was a great idea. It covered up the holes in the cake and added an extra little touch. I wasn’t terribly sad to say it was from a mix either since I added my own touch. This cake and I certainly were good friends after this whole thing. And thank goodness it tasted great.

Think I’ll have another piece now and just enjoy it. And remember the good times we had together.

    I think ganache makes everything better. Looks delicious – and very pretty!

    So, I have a hell of a time getting cakes out of bundt pans. I thought I would make it better by getting a nonstick bundt pan, but the pan is so dark it burns everything. It’s like you can never win!
