From Paris…

…to Denver.

I’m spending this weekend with the three lovely ladies who I met while studying abroad in Paris…and then traveled all over Europe with. I’m beyond excited to reconnect with them. I can’t wait to report back on my amazing trip – which hopefully includes great food and exploring a new city (which is really what we do best together!)

Easy Fried Rice

A little while ago Alex asked me to start blogging about easy dinners for the young DC professional on a budget.

I recommended making pizza, which I do a lot and is especially easy with the help of Trader Joe’s cheap pizza dough. But I told him I’d try to put more ideas out there.

All of the ingredients for this fried rice/stir fry I already had and you can use really any veggies or also add chicken or beef. I made twice as much so that I have enough to bring to work tomorrow for lunch (another money-saver!)

Tuesday Night Fried Rice

  • 1-2 eggs
  • 2 cups cooked brown rice
  • 1 cup frozen onions, red and green peppers mix
  • 2 Tablespoons soy sauce
  • 2 packets of sweet and sour sauce from Chinese take-out (optional)
  • Cooking oil (vegetable or olive)
  1. Heat some oil over medium heat and scramble the eggs until just barely cooked. Scrape into a bowl and set aside.
  2. Add a teaspoon oil to the pan and stir in the rice so that all the rice is covered in the oil. Spread out around the pan and let cook for a few minutes. Stir it up and spread it out again. Continue until the rice is starting to brown.
  3. Stir in soy sauce and sweet and sour sauce if you have it. Add frozen vegetables and continue to cook until they’re heated thoroughly. Stir in the eggs.
  4. For a little something extra, top with pot stickers or dumplings (these came from Trader Joe’s).
