Banana Bread Anytime
Good morning world. If you’re looking to make something super easy and wonderfully delicious for breakfast this morning, I’d go for this chocolate chip, walnut banana bread. It’s flavorful, moist and very quick and simple to make.
Baking with bananas is one of my favorite things, as I’ve mentioned before. (And of course it’s also the bf’s favorite…and he’s often requesting it.) Mashed bananas add so much to a batter, any batter, really. I made some tweaks to my basic banana bread recipe and came out with this beauty, that not only lasted a couple of days for breakfast, but was a pretty suitable dessert as well. And ok, the chocolate AND nuts were a little much… but sometimes you need a little decadence for breakfast.
Banana Bread with Chocolate Chips and Walnuts

1/2 cup butter, softened

1/2 cup granulated sugar

3 large bananas, peeled, mashed

1 egg, lightly beaten

1 Tbsp. vegetable oil

1-1/2 cups flour

2 tsp. baking powder
-
1 tsp. ground cinnamon
-
1/2 tsp. salt
- 3/4 cup chocolate chips
- 3/4 cup chopped walnuts
- Preheat oven to 350°F.
- Beat butter and sugar in large bowl with electric mixer until light and fluffy.
- Add bananas, egg and oil; mix until well blended.
- Mix flour, baking powder, cinnamon and salt in separate bowl.
- Add flour mix to banana mixture, mixing well after each addition.
- Gently stir in the chocolate chips and walnuts.
- Pour into greased 9×5-inch loaf pan and bake for 1 hour.

I once took a risk. I didn’t think it was at the time though. But it was new and challenging and all types of scary. I don’t take risks. I once took a risk and abandoned my routines, traditions and plans.
And I found a new one. At the Royal Pereire café in the 17th. In the corner window. With a café crème, my journal and watching the people walk by. It was simple. It was easy, but it wasn’t too. It wasn’t Starbucks. But I do the same thing at Starbucks. It was new.
