Favorite Pistachio Cookies

Cupcakes for Breakfast: Pistachio Cookies

These are my absolute favorite Christmas cookies. Every Christmas Eve my family hosts a large party for family and friends. We cook the Italian feast and everyone else brings dessert. One year, my Jewish high school boyfriend’s family came to the party and brought these amazing pistachio cookies. My aunt asked for the recipe that night and I’m so glad I have it now because it’s basically one of the only wonderful things I still hold on to connected to that relationship. Ha.

These cookies are soft, sweet, have the perfect pistachio flavor, oh and they are an awesome color!

I’m soooo glad I came across this recipie. One question: Are these cookies chewy or crunchy? (Crossing fingers for chewy.)

THESE COOKIES ARE DELICIOUS! Very light in texture and flavorful. I drizzled melted chocolate on the tops.

I just made the dough and its chilling in the refrigerator right now :) The dough is delicious, but I can’t see any of the photos of the cookies that you have put up :( Making them with good faith in the comments and so far they’re great, not having any problems with any other photos on your site which is adorable, just the pistachio cookies, huh.
